Ginger Glazed Carrots

Ingredients:
8 - 10 medium sized carrots
1 tbl sugar
1 cinnamon stick
1 ½ tbl butter, melted
½ tsp ground ginger
2 tbl brown sugar
1 tsp. chopped fresh parsley
water

Directions:
Place sugar, cinnamon sticks, and carrots into a saucepan. Pour enough water into the saucepan to cover the carrots. Simmer for 20-25 minutes. Drain. Combine butter, brown sugar, ginger, and parsley into a saucepan. Toss lightly with drained carrots.

It serves approximately 8, depending on how large you want the portions to be.
